LALO is named in honor of Eduardo "Lalo" González, the son of Don Julio González and the father of our co-founder and maestro tequilero, who is also named Lalo. Lalo continues as the third generation of his tequilero family with a bold new approach to perfecting blanco tequila.

After nearly a decade in the tequila industry, David Carballido, Lalo's childhood friend, approached Lalo to create a truly pure blanco tequila. Together, they wanted to showcase a traditionally made tequila with a distinctly modern, Mexican aesthetic. What began as a small, private batch in Guadalajara is now a premium tequila that is beloved for its crisp, pure taste.

Each bottle of LALO is 100% pure. We distill only twice to maintain the integrity of our agave, and add no flavors or additives. With LALO, our ingredients are only agave, yeast and water to honor the complex essence of agave.

Tasting Notes:
On the nose, this rye exudes rich fudge-filled brownies with apricot jam sweetness, underscored by earthy birch and freshly cracked black pepper.

The first sip unleashes spry vanilla and peppery arugula alongside snappy white peppercorns. As the finish lingers, sweet cherry cordials and supple leather emerge.

Blender's Story:
Nestled in the town of Rochelle, Illinois, just 4 hours north of St. Louis, resides the historic Kennay Farms Distillery. Occupying a converted 1930s movie theater that once hosted the close-knit farming community, Kennay Farms now houses their family-run distillery, brewery, and tasting room. The repurposed building echoes six generations of agricultural tradition in Illinois, dating back to the 1880s.

Captured in these bottles is some of Kennay Farms' oldest aged rye whiskey to date. By blending two remarkable 15-gallon barrels, I’ve crafted a whiskey that evokes nights filled with cherished records. Letting the music guide your evening into self-reflective meditation.

I hand-selected these barrels seeking to strike that perfect chord - like band members blending their sounds into artistic harmony. Drawn from generations of distilling expertise, this rye whiskey release is my tribute to the phenomenon of finding the right song the the right moment.

This double IPA was brewed with a new base malt to us and heaps of flaked wheat. We added Citra and Nectaron to the hot whirlpool for soft bitterness contribution. We then double dry hopped the fermenter with flash frozen fresh Citra pellets in addition to cryo Citra and Nectaron. We love how it turned out and hope you will too

Trévallon is known for its long aging process, more than 2 years for its reds. Racking is kept to a strict minimum, the lees found at the bottom of the barrels continue to nourish the wine during the ageing process Terroir : Limestone and clay soil, very stony: Hauterivian et Barremian, second stage of the lower Cretaceous, less than 130 million years.
The coolness of the nights allowed to obtain a wine with great liveliness and a beautiful finesse of tannins: Mixture of crushed strawberries and black olives with a finish and Eucalyptus.  This vintage, smooth and supple, will be accessible when young, and can also be kept for many years.
Food pairings : It will go perfectly with lamb, beef...

Domaine Trevallon - one of the classics!
Since its inception, Domaine de Trévallon has been a trailblazer for quality wine production in the South of France. In 1993 local authorities changed the regulations for grape production in the appellation of Les Beaux de Provence, lowering the permitted percentage of Cabernet Sauvignon to 20%. Domaine de Trévallon’s red is always a blend of 50% Syrah and 50% Cabernet Sauvignon. Refusing to change his style, Eloi opted to produce his wine as a Vin de Pays (Vin de Pays des Bouches du Rhône). By doing so Domaine de Trévallon, like todays “super-Tuscans”, was among the first wineries to choose to go outside local appellation rules to produce higher quality wines.

Above all, Eloi produces “natural wines” with as little human intervention as possible. He avoids excess use of technology which he believes leads to standardized, uniform wines. Eloi uses no pesticides or chemicals in the vineyards and he keeps yields below 25 hectoliters per hectare. In the winery the grapes are not de-stemmed, and only natural indigenous yeasts are used. The reds are aged in large oak foudres for 2 years , are non-filtered, and are only occasionally fined with egg whites before bottling. The reds from Trévallon are always 50% Cabernet Sauvignon & 50% Syrah.

Isn't fresh fish better than frozen?
At the end of the day, “fresh” fish at the grocery store may not always be as fresh as you think. The reality is, unless you live on the coast or near a fishing port, you’re likely not eating truly fresh fish (meaning fish that has never been frozen).  Wheelhouse Fish Co. products are flash frozen, which preserves its flavor and texture. All of this is locked in until the moment you’re ready to thaw and prepare it!

How should I defrost my catch?
Thaw frozen seafood in the fridge overnight or in a plastic bag under cool running water – never in warm water or at room temperature.
